The last issue of TAWARAYA RYOKAN is about breakfast.
the break fast is very simple.
but it was very gorgeous.
there were many food,grilled fish,boild TOFU,and so on.
At first,they started with fresh japanese orange juice.
you will feel waking your body.
a little bit sour,and sweet.
and milk was very rich and no acridity.
when im eating breakfast in RYOKAN,
i always think that i must leave this inn today !
grilled fishes. horse mackerel is japanese standard for breakfast.
and there was one more fish,HATAHATA.
japanese people call this fish,god fish!
with boild eggs,and lemons,these make breakfast be colorful.
the YUDOFU. this is KYOTO.
i asked “Is this TOFU from Hirano shoten at the corner ?”
she said “yes.”
and KYOTO best 3 inns,TAWARAYA RYOKAN,
HIIRAGIYA RYOKAN,SUMIYA, all use HIRANO SHOTEN’s TOFU.
and she said,”everyone can make UDOFU,it’s very easy”.
this mean HIRANO SHOTEN’s TOFU is perfect.
there were many spices for TOFU.
every spice make me feel,”this spice is best for TOFU !”
OSHINKO.
juicy and salty.good balance.
SHIRASU SANSHO.
Very small fishes and japanese pepper.
good for rice, and special flavor.
the last one, OMISOSHIRU[miso soup].
GOCHISOSAMADESHITA.
I was totally satisfied.
when i checked out, i got change.
all bills were new, and all coins were shining.
and i get out of TAWARAYA RYOKAN, many staff were standing,
and bowing in front of TAWARAYA RYOKAN until i turned the corner.
(actually, this style makes me nervous…)
anyway,everything was good,and you can understand
what OMOTENASHI is.
and more,
if i was asked from foreign friend,
“do you know where i have to go if i want to know
japanese historical art sense?”
i will answer like this,
” you must go to TAWARAYA RYOKAN.
you can understand,japanese art sense,culture,mind,
archetecture,food,courtesy,and so on, just one night.
